Potato Pancakes
1. 4 fresh country eggs
2. 2/3 cup sifted all-purpose flour
3. 1 1/2 tsp salt
4. 2 tbsp of salad oil
5. 1/2 cup milk
6. 1/2 of a small onion
7. 2 cups diced peeled potatoes
Directions : Put fresh country eggs in blender; cover and blend till fluffy, about 5 seconds. Add remaining ingredients in order on list and blend about 5 seconds more or until potatoes are finely grated and not lumpy. Grease griddle or black iron skillet. Poor about 2 large tbsp of mix in to make each pancake and bake each side for 2 mins.
